Description

This Gluten Free Peach Crisp is a delightful treat featuring sweet, juicy peaches blended with oats and almond flour. With its simple preparation and mouthwatering flavors, it’s perfect for a comforting dessert that everyone will love!


Ingredients

  • 2 lbs peaches, 6-8 peaches
  • 2 tablespoons granulated sugar
  • 2 tablespoons gluten free flour
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • ice cream or whipped cream, for serving
  • 3/4 cup certified gluten free old fashioned oats
  • 3/4 cup brown sugar
  • 1/4 cup finely ground almond flour
  • 1/4 cup sliced almonds
  • 2 tablespoons gluten free flour
  • 1 teaspoon cinnamon
  • pinch salt
  • 6 tablespoons cold butter or vegan butter, cut into 1/4″ cubes

Instructions

  1. Preheat the oven to 350 degrees. Spray an 8×8” baking dish with nonstick spray and set it aside.
  2. In a large pot, bring water to a boil. Score an 'X' on the bottom of each peach, then add the peaches to the boiling water for about 30 seconds until the skins peel easily.
  3. Transfer the peaches to a cutting board once cool enough to handle, peel off the skin, and chop into about 1/2 – 3/4 inch pieces, yielding 4-5 cups of chopped peaches.
  4. In a large mixing bowl, combine the chopped peaches, gluten free flour, granulated sugar, vanilla extract, and cinnamon. Gently fold to coat the peaches and scrape the mixture into the prepared baking dish.

Notes

Serve with a scoop of vanilla ice cream or whipped cream for an extra treat.
Adjust the sweetness according to the ripeness of the peaches used.
Store any leftovers in an airtight container in the refrigerator.
