  • 1 teaspoon garlic powder
  • 1 (24 ounce) jar pasta sauce

  • 1 egg
  • 2 cups shredded Italian cheese blend
  • ¼ cup milk
  • garlic bread or pasta, for serving, optional

Instructions

  1. Preheat the oven to 375°F and grease a 9×13-inch baking dish.
  2. Slice the zucchini in half lengthwise, then cut into ½-inch moons.
  3. Heat olive oil in a large skillet over medium-high heat. Add zucchini, salt, and pepper, cooking until zucchini softens, about 3 to 6 minutes. Transfer to the prepared baking dish.
  4. In the same skillet, add ground beef and onion, cooking until no pink remains. Drain any excess fat.
  5. Stir in Italian seasoning, garlic powder, pasta sauce, and diced tomatoes. Add this mixture to the baking dish and gently mix with the zucchini.
  6. In a small bowl, whisk together egg and milk. Stir in cheese until coated with the egg mixture. Spoon this cheese blend evenly over the casserole.
  7. Bake for 25 to 30 minutes or until hot, bubbly, and lightly browned on top.
  8. Allow the casserole to rest for 10 minutes before serving.

Notes

For extra flavor, consider adding additional vegetables like bell peppers.
