- 3 tbsp avocado, canola, or vegetable oil for cooking
- 2 cups shredded zucchini – squeezed (2 large zucchini, around 1.5 lbs)
- 1 cup panko bread crumbs
- 2 eggs
- 1/3 cup fresh grated parmesan cheese
- 1/4 cup finely shredded mozzarella cheese
- 2 garlic cloves
- 1 tsp salt
- 1 tsp fresh cracked black pepper
Instructions
- Grate the zucchini using a box grater and transfer it into a mesh bag or cheese cloth. Squeeze out excess liquid thoroughly.
- In a mixing bowl, combine the squeezed zucchini with the remaining ingredients and mix until well combined.
- Preheat a large skillet over medium heat and add oil. Scoop even amounts of zucchini mixture, shape them into fritters, and place them carefully in the skillet.
- Cook fritters for 4-6 minutes on each side until golden brown, flipping them only once.
- If cooking multiple batches, add a bit more oil to the pan as needed.
Notes
Ensure to squeeze out as much moisture from the zucchini as possible to prevent soggy fritters.
Cook on medium to medium-low heat for an even cook on the inside and outside.
