Description

These irresistible Valentine’s Day Decadent Gingerbread Latte Mousse Domes combine rich espresso and white chocolate for a delightful treat. With simple steps and cozy spices, they are ideal for any festive occasion, making them a great homemade dessert option.


Ingredients

  • 1 cup espresso
  • 1/2 cup brown sugar
  • 1 cup white chocolate
  • 1 teaspoon cinnamon
  • 1/2 teaspoon cloves
  • 1/4 teaspoon nutmeg
  • 1 tablespoon gelatin
  • 1 cup mascarpone
  • 1/2 cup molasses
  • 1 egg yolk
  • 2 teaspoons ginger

Instructions

  • Bloom gelatin in cold water in a small bowl.
  • In a saucepan, heat 1 cup of warm espresso and stir in 1/2 cup of brown sugar until dissolved.
  • Add 1 cup of white chocolate, cinnamon, cloves, and nutmeg to the espresso mixture. Stir until smooth and let cool slightly.
  • In a mixing bowl, combine 1 cup of mascarpone and 1 cup of heavy cream, beating until soft peaks form (about 2-3 minutes).
  • Fold the slightly cooled mousse base into the whipped cream mixture until smooth and fluffy.
  • In another bowl, mix flour, ground ginger, and a pinch of salt. Stir in 1/2 cup of molasses and 1 egg yolk until a soft dough forms.
  • Roll out the dough to 1/4-inch thick and cut circles for the cookie base.
  • Grease silicone dome molds and fill with mousse mixture, pressing cookie rounds into the mousse until just submerged.
  • Cover molds with plastic wrap and freeze overnight.
  • Once solid, heat glazing ingredients to around 90°F. Remove mousse domes from molds and place on a wire rack over a baking sheet.
  • Pour warm glaze over the domes evenly and serve on a plate. Optionally, decorate with cocoa powder or mini gingerbread cookies.

Notes

Ensure the glaze is warm enough for even coating at around 90°F.
Use silicone molds for easy removal of mousse domes after freezing.
You can substitute mascarpone with cream cheese if needed.
