These irresistible Valentine’s Day Decadent Gingerbread Latte Mousse Domes combine rich espresso and white chocolate for a delightful treat. With simple steps and cozy spices, they are ideal for any festive occasion, making them a great homemade dessert option.

- 1 cup espresso
- 1/2 cup brown sugar
- 1 cup white chocolate
- 1 teaspoon cinnamon
- 1/2 teaspoon cloves
- 1/4 teaspoon nutmeg
- 1 tablespoon gelatin
- 1 cup mascarpone
- 1/2 cup molasses
- 1 egg yolk
- 2 teaspoons ginger
Instructions
- Bloom gelatin in cold water in a small bowl.
- In a saucepan, heat 1 cup of warm espresso and stir in 1/2 cup of brown sugar until dissolved.
- Add 1 cup of white chocolate, cinnamon, cloves, and nutmeg to the espresso mixture. Stir until smooth and let cool slightly.
- In a mixing bowl, combine 1 cup of mascarpone and 1 cup of heavy cream, beating until soft peaks form (about 2-3 minutes).
- Fold the slightly cooled mousse base into the whipped cream mixture until smooth and fluffy.
- In another bowl, mix flour, ground ginger, and a pinch of salt. Stir in 1/2 cup of molasses and 1 egg yolk until a soft dough forms.
- Roll out the dough to 1/4-inch thick and cut circles for the cookie base.
- Grease silicone dome molds and fill with mousse mixture, pressing cookie rounds into the mousse until just submerged.
- Cover molds with plastic wrap and freeze overnight.
- Once solid, heat glazing ingredients to around 90°F. Remove mousse domes from molds and place on a wire rack over a baking sheet.
- Pour warm glaze over the domes evenly and serve on a plate. Optionally, decorate with cocoa powder or mini gingerbread cookies.
Notes
Ensure the glaze is warm enough for even coating at around 90°F.
Use silicone molds for easy removal of mousse domes after freezing.
You can substitute mascarpone with cream cheese if needed.
