Description

Valentine strawberry yogurt bites are a delightful combination of creamy yogurt, fresh strawberries, and crunchy granola, offering irresistible flavors and a simple prep. Perfect for a quick, healthy snack or dessert for any occasion.


Ingredients

  • ½ cup granola, more for topping
  • 1 cup yogurt of choice
  • ½ cup fresh strawberries, hulled and diced
  • ¾ cup fresh strawberries, sliced or chopped
  • ¼ cup granola, smaller pieces work better

Instructions

  • Line a 12-cup muffin pan with muffin liners or use a 12-cup silicone baking pan.
  • Sprinkle about 2 teaspoons of granola into the bottom of each cup. Set aside.
  • In a medium bowl, combine yogurt and diced strawberries. Use a pastry cutter or fork to mash fruits into yogurt, leaving a few chunks.
  • Stir and fold the mixture until well combined using a rubber spatula or wooden spoon.
  • Spoon 2 tablespoons of the strawberry yogurt mixture into each cup, ensuring an even layer. Tap the pan to smooth each layer.
  • Press about 1 tablespoon of sliced strawberries into the tops of each cup.
  • Sprinkle about 1 teaspoon of granola over strawberries.
  • Place the pan into the freezer and chill until firm, about 2-4 hours.
  • Pop out each frozen yogurt bite, thaw for a few minutes, then enjoy.

Notes

Feel free to use any flavor of yogurt for a unique taste.
Add more toppings like nuts or seeds for extra crunch and variety.
The yogurt bites can be stored in an airtight container in the freezer for a fun treat anytime.
