Description

These Valentine Strawberry Cake Truffles are a delightful treat, combining strawberry cake mix and cream cheese for an irresistible flavor. Easy to prepare and perfect for sharing, these truffles are coated in colorful candy melts, making them an ideal choice for any celebration or sweet craving.

  • 15.25 ounce strawberry cake mix
  • 8 ounce block cream cheese, softened to room temperature
  • ⅓ cup cream cheese chips, roughly chopped
  • 2 10 oz bags Ghirardelli vanilla melting wafers
  • ½ cup Wilton pink candy melts
  • ½ cup Wilton bright pink candy melts
  • Sprinkles (optional)

Instructions

  • Preheat the oven to 350°F and line a baking sheet with parchment paper to heat treat the cake mix.
  • Spread the cake mix onto the prepared baking sheet and bake for 5 minutes. Cool completely on a wire rack.
  • In a medium bowl, beat the softened cream cheese with a hand mixer until smooth and creamy.
  • Add the cooled cake mix and fold in with a spatula, then mix with the hand mixer until combined and dough-like.
  • Gently fold in the cream cheese chips until evenly blended.
  • Cover the dough with plastic wrap and chill in the refrigerator for 2 hours.
  • Line two baking sheets with parchment paper. Use a cookie scoop to place dough onto the sheets and roll into balls. Let them sit for about 15 minutes to avoid cracking.
  • Melt the vanilla melting wafers using a double boiler or microwave, stirring regularly until fully melted.
  • Dip each dough ball into the melted vanilla wafers using a fork. Tap off excess coating and place on baking sheet, sprinkling half with sprinkles before the coating dries.
  • Melt the pink candy melts in piping bags, then drizzle over the coated balls.
  • Let them set completely before serving.

Notes

Using a double boiler prevents the melting wafers from overheating and maintains their texture.
Ensure the dough balls are smooth to avoid cracks in the coating during dipping.
Chilling the dough before rolling helps firm it up and makes shaping easier.
