- 4 large russet potatoes
- 1/2 cup sour cream
- 1 cup shredded cheddar cheese
- 1/2 cup cooked bacon, crumbled
- 1/4 cup green onions, chopped
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat the oven to 375°F (190°C).
- Bake the russet potatoes for about 1 hour or until tender when pierced with a fork.
- Allow the potatoes to cool slightly, then cut them in half lengthwise and scoop out the insides into a mixing bowl.
- Mash the potatoes and mix in the sour cream, half of the cheddar cheese, bacon, green onions, garlic powder, salt, and black pepper until well combined.
- Spoon the potato mixture back into the potato skins and sprinkle the remaining cheddar cheese on top.
- Place the filled potatoes on a baking sheet and return to the oven for 20-25 minutes until heated through and the cheese is bubbly.
