Description

Ingredients

  • 1 cup all-purpose flour, or substitute 1:1 gf flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 5 eggs, (large)
  • 1 cup sugar, divided into 3/4 and 1/4 cups
  • 1 tsp vanilla extract
  • 1/3 cup whole milk
  • 12 oz evaporated milk
  • 9 oz sweetened condensed milk
  • 1/3 cup heavy whipping cream
  • 2 cups heavy whipping cream
  • 2 tbsp granulated sugar
  • 1 cup berries, to garnish, optional

Instructions

  1. Preheat the oven to 350 °F and grease a 9×13 casserole pan. Prepare three mixing bowls.
  2. In a large bowl, sift together the flour, baking powder, and salt. Separate the egg whites and yolks into the remaining two bowls.
  3. Beat the egg yolks with 3/4 cup of sugar using an electric mixer on high speed until they turn pale yellow (about 2 minutes). Stir in the milk and vanilla extract.
  4. Whisk the egg whites on high speed until soft peaks form (1 minute). Gradually add the remaining 1/4 cup of sugar while continuing to beat until the egg whites are stiff but not dry (about 1 minute).
  5. Combine the egg yolk mixture with the flour mixture gently using a spatula. Carefully fold in the egg white mixture until the batter is just combined.
  6. Pour the batter into the prepared pan, spreading it evenly, and bake for 30-35 minutes or until a toothpick inserted comes out clean.

Notes

Allow the cake to cool completely before adding the milk mixture for best results.
For a richer flavor, consider using whole milk and heavy cream in the soaking mixture.
You can garnish with various berries for added freshness and color.
