Description

Tomato and Mozzarella Pasta (Pasta alla Checca) is a delightful and easy meal, featuring fresh tomatoes, creamy mozzarella, and fragrant basil. This dish brings irresistible flavors and quick preparation to any dinner table, making it an ideal choice for a cozy night in or a healthy homemade meal.


Ingredients

  • 1 pound cherry tomatoes
  • 8 ounces fresh mozzarella
  • 3 cloves garlic
  • 1 large lemon
  • 1/3 cup extra virgin olive oil
  • 1 teaspoon dried oregano
  • 1/2 cup fresh basil leaves
  • salt and pepper
  • 16 ounces spaghetti noodles
  • freshly grated parmigiano reggiano or pecorino romano
  • extra-virgin olive oil

Instructions

  1. In a large bowl, combine halved cherry tomatoes, mozzarella, and garlic. Add lemon zest, lemon juice, olive oil, and dried oregano. Season with salt and pepper, then stir well and set aside to marinate.
  2. Bring a large pot of salted water to a boil. Add spaghetti and cook according to package instructions until al dente. Reserve ½ cup of pasta water before draining.
  3. Drain the pasta and toss it immediately with the sauce mixture in the bowl. Add a few spoonfuls of reserved pasta water and mix until well coated. Adjust with more water if necessary.
  4. Tear fresh basil over the top and gently mix in. Taste and season as needed. Serve hot, topped with freshly grated Parmesan or Pecorino Romano and a drizzle of olive oil.

Notes

For the best flavor, let the tomatoes marinate for at least 30 minutes before serving.
Adjust the amount of garlic according to your preference; you can use raw or roasted garlic for different flavors.
A drizzle of balsamic glaze can add an extra layer of flavor to the finished dish.
