  • 6 large eggs (room temperature)
  • 1 cup granulated sugar
  • 1 cup all purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 4 ounces cream cheese (room temperature)
  • 4 ounces mascarpone cheese (cold)
  • 1 cup butter (room temperature)
  • 5 cups powdered sugar
  • 1 teaspoon pure vanilla extract
  • 1/4 cup strongly brewed coffee or espresso
  • 1/4 cup unsweetened cocoa powder (for garnish)

Instructions

  1. Preheat the oven to 350°F and grease the bottom of three 6-inch round cake pans, lining them with parchment paper.
  2. In a stand mixer, beat the eggs on medium-high speed while gradually adding granulated sugar until the batter reaches the ribbon stage.
  3. Sift the flour, baking powder, and cinnamon into the egg mixture, gently folding it in to avoid deflating the batter.
  4. Divide the batter among the pans and bake for 15-18 minutes, or until a toothpick inserted comes out clean.
  5. Allow the cakes to cool for 10 minutes, then transfer to wire racks to cool completely.
  6. Optional: Freeze the layers for at least 4 hours for easier frosting, brushing the tops with espresso when ready to assemble.
  7. In a stand mixer, beat cream cheese, mascarpone, and butter until smooth. Gradually add powdered sugar, scraping sides as needed.
  8. Add vanilla extract and beat on high speed until the frosting is light and fluffy.
  9. Brush tops of cooled cake layers with espresso. Start assembly with the bottom layer, applying 1/3 of the frosting.
  10. Repeat with the second layer, and place the top layer espresso side-down, adding a smooth layer of frosting on top and sides.
  11. Pipe any remaining frosting on the top and dust with cocoa powder.
  12. Cover loosely with plastic wrap and refrigerate for 4 hours before serving.

Notes

Ensure all dairy ingredients are at room temperature for the best mixing results.
Sifting the dry ingredients helps avoid lumps in the batter and frosting.
