  • 1/4 cup greek yogurt

  • 2 cups shredded zucchini
  • 1 cup semisweet chocolate chips
  • 3/4 cup chopped dark chocolate

Instructions

  1. Preheat your oven to 350°F. Grease an 8.5-by-4.5-inch loaf pan and line it with parchment paper, leaving an overhang for easy removal.
  2. In a medium bowl, whisk together the flour, cocoa powder, baking soda, baking powder, salt, and espresso powder. Set aside.
  3. In a large bowl, whisk the eggs, vegetable oil, greek yogurt, granulated sugar, and vanilla extract until smooth and combined.
  4. Add the shredded zucchini and mix until well combined.
  5. Gradually mix the dry ingredients into the wet ingredients until just combined, avoiding overmixing.
  6. Fold in the semisweet chocolate chips evenly into the batter.
  7. Pour the batter into the prepared loaf pan and smooth the top. Sprinkle with dark chocolate chunks.
  8. Bake for 55 to 70 minutes, checking for doneness starting at 55 minutes. A toothpick inserted into the center should come out with a few moist crumbs.
  9. Cool in the pan for 15 minutes, then use the parchment to lift the bread onto a wire rack to cool completely.
