  • 1 cup (227 g) salted butter
  • 1½ cups (300 g) granulated sugar
  • 1 large egg
  • 1 egg yolk
  • 2 teaspoons vanilla
  • ½ teaspoon (0.5 teaspoon) almond extract
  • 2¾ cups (380 g) all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon (0.5 teaspoon) salt
  • 4 ounces (113.4 g) cream cheese
  • 2 tablespoons salted butter
  • 1 teaspoon vanilla
  • pinch of salt
  • 1¾ cup (210 g) powdered sugar
  • fresh fruit for topping

Instructions

  1. Preheat the oven to 375°F (190°C) and line two baking sheets with parchment paper.
  2. In a stand mixer, beat together the butter and sugar on medium-high speed until light and fluffy, about 3 minutes. Add the egg, egg yolk, vanilla, and almond extract, mixing on low until smooth, about 30 seconds.
  3. Gradually mix in the baking soda, salt, and flour until just combined.
  4. Scoop the dough into large balls, using a ¼ cup cookie scoop if available.
  5. Place 6-7 cookie dough balls on each lined baking sheet and bake for 11-14 minutes until golden brown around the edges and slightly crackled on top. Avoid overbaking to maintain a chewy texture.
  6. In a bowl, beat together the cream cheese and butter until smooth. Add the vanilla, pinch of salt, and powdered sugar, mixing until well blended. Spread a layer of frosting on each cookie.
  7. Dice fresh fruit into small pieces and sprinkle on top of each cookie.

Notes

For extra flavor, use vanilla paste instead of regular vanilla extract.
Ensure the butter is softened to room temperature for easy mixing.
