Description

These Strawberry Swirl Marshmallows are fluffy, flavorful, and easy to make. With just a few key ingredients like gelatin and strawberry jello, this recipe offers a sweet treat that’s perfect for sharing or enjoying on your own.


Ingredients

  • 1/4 cup powdered sugar
  • 2 tablespoons cornstarch
  • 2 packets of unflavored gelatin
  • 1 cup water divided
  • 3/4 cup granulated sugar
  • 1/2 cup light corn syrup
  • 1/4 teaspoon salt
  • 3 ounces strawberry jello
  • 3 teaspoons strawberry extract
  • 2 drops red gel food coloring

Instructions

  • In a small bowl, combine the unflavored gelatin with 1/2 cup of water and let it bloom.
  • In a large saucepan, mix together the sugar, corn syrup, the remaining 1/2 cup of water, and salt, and heat until it reaches 240 degrees F.
  • Stir in the strawberry jello until fully mixed in.
  • Add the bloomed gelatin to a stand mixer bowl and slowly pour the hot syrup into the bowl, ensuring the gelatin dissolves.
  • Whip the mixture with the whisk attachment for 8 to 10 minutes until it becomes fluffy and stiff.
  • Meanwhile, prepare an 8×8 inch square pan by lightly spraying it with nonstick baking spray.
  • In a small bowl, combine the powdered sugar and cornstarch, setting aside half for dusting the top of the marshmallows.
  • Dust the prepared pan with the powdered sugar and cornstarch mixture to prevent sticking.
  • During the last minute of whipping, add the strawberry extract and food coloring, continuing to beat until well combined.
  • Transfer the marshmallow mixture to the prepared pan.
  • For a red swirl effect, add an extra 1 to 2 drops of food coloring on each side of the mixture and swirl with a skewer.
  • Cover the marshmallows with the reserved powdered sugar and cornstarch mixture.
  • Allow the marshmallows to rest for a minimum of 4 hours, preferably overnight, to set.
  • Once set, use a sharp knife or pizza cutter to slice the marshmallows into 12 pieces, dusting the knife with the sugar/cornstarch mixture if they are sticky.
  • Toss the marshmallows in additional powdered sugar to keep them from being sticky.

Notes

Ensure the gelatin is fully dissolved for the best texture.
Overnight resting yields the best firmness for marshmallows.
Feel free to adjust the food coloring for desired swirl effects.
