- 1 Egg, Beaten
- 1 tsp Water
- 2 1/2 cups Rhubarb, Chopped
- 2 1/2 cups Strawberries, Chopped
- 1 cup Sugar
- 3 tbsp Minute Tapioca
- 1 tbsp Flour
- 1/2 tsp Lemon Zest
- 1/2 tsp Lemon Juice
- 1/2 tsp Cinnamon
- 1 tsp Vanilla
- 3 tbsp Butter
- 2 cups Flour
- 3/4 cup Butter Flavored Crisco
- 1 tsp Salt
- 4 tbsp Cold Water
Instructions
- Preheat the oven to 375 degrees.
- Combine pie crust ingredients: flour, Crisco, and salt. Gradually stir in cold water to form a dough.
- Divide the dough in half. Roll out the first half on a floured surface and place it in a pie pan.
- Roll out the second half on a floured surface and set aside.
- In a large mixing bowl, combine chopped rhubarb, strawberries, sugar, tapioca, flour, lemon zest, lemon juice, cinnamon, and vanilla until well mixed.
- Pour the fruit mixture into the prepared pie crust.
- Cut butter into small chunks and distribute them over the fruit filling.
- Brush the edges of the bottom crust with water and cover with the top crust.
- Seal the edges of the crust together by pressing with a floured finger or a fork, trimming any excess dough.
- Beat the egg and water together, then brush this mixture over the top crust. Sprinkle sugar on top and cut slits in the crust to allow steam to escape.
- Cover the edges of the pie with aluminum foil to prevent burning.
- Bake for 45-50 minutes, or until the filling bubbles. Use additional foil if the crust gets too dark.
- Allow the pie to cool before slicing.
Notes
For added flavor, consider using fresh herbs like mint in the filling.
Feel free to adjust the sugar according to the tartness of the rhubarb and sweetness of the strawberries.
Ensure the crust is chilled before rolling it out for a flakier texture.
