  • 1 and 1/4 cups (248 g) granulated sugar
  • 1/4 cup (53 g) light brown sugar, packed
  • 1 tablespoon (14 ml) vanilla extract
  • 2 large eggs, room temperature
  • 11 ounces white chocolate chips
  • 2 1.2 ounce bags (68 g) freeze-dried strawberries

Instructions

  1. Preheat the oven to 325°F and prepare two large baking sheets with parchment paper.
  2. In a large bowl, whisk together the flour, baking soda, and salt before setting aside.
  3. Combine the butter and both sugars in a stand mixer or bowl, beating on medium speed for about 3 minutes until fluffy. Add the vanilla extract.
  4. Lower the mixer speed and add the eggs one at a time, ensuring each is fully incorporated before adding the next.
  5. With the mixer on low, add the flour mixture gradually and mix until combined. Stir in the white chocolate chips and dried strawberries until evenly blended.
  6. Scoop about 3 tablespoons (75 g) of cookie dough using a spring-loaded scoop and form into a ball. Place the dough on the baking sheet, ensuring the side with more toppings is facing up, leaving 2 inches between each.
  7. Bake each sheet for 12 to 13 minutes, or until the edges are golden but the centers remain soft.
  8. Once baked, use a spatula to tuck in any overly spread edges for a round shape.
  9. If desired, press extra white chocolate chips on top and let the cookies cool on the baking sheet for 20 minutes.
