Description

This delightful dish combines tender steak bites with creamy mushroom orzo for a quick, flavorful dinner. Perfect for a homemade meal that brings comfort and satisfaction with every bite.

  • 2 tablespoons unsalted butter, divided
  • 1 ½ cups (204 g) orzo pasta, uncooked
  • 3 cups (720 g / 24 ounces) chicken broth
  • 8 ounces baby bella mushrooms, sliced
  • ½ teaspoon kosher salt, divided
  • 1 large yellow onion, diced (about 1 ½ cups)
  • 1 ½ teaspoons garlic, minced
  • ¾ cup (178.5 g) heavy whipping cream
  • 1 cup (100 g) parmesan cheese, freshly grated
  • ¼ teaspoon black pepper
  • 1 pinch red pepper flakes, optional
  • 1 teaspoon fresh lemon juice
  • Fresh parsley chopped for garnish
  • 1 pound top sirloin steak, cut into 1-inch cubes
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • 1 tablespoon vegetable oil
  • 1 tablespoon unsalted butter

Instructions

  1. Heat a large skillet over medium heat and melt 1 tablespoon of butter. Add orzo and toast it while stirring until golden, about 3 to 4 minutes.
  2. Add chicken broth and bring to a boil. Lower the heat, cover, and simmer for 12 to 15 minutes until mostly absorbed. Keep covered once removed from heat.
  3. In another skillet over medium-high heat, melt the remaining butter, then add the mushrooms. Cook undisturbed for 2 to 3 minutes to brown them.
  4. Season mushrooms with a pinch of kosher salt, then add diced onion and stir. Cook until mushrooms are golden and moisture evaporates, about 5 to 6 minutes.
  5. Add minced garlic and cook for 30 seconds.
  6. Lower heat to medium-low, then add heavy cream, parmesan, remaining salt, black pepper, and red pepper flakes. Stir and simmer for 2 to 3 minutes until thickened.
  7. Stir in lemon juice and combine with the cooked orzo, keeping it warm.
  8. Wipe the mushroom skillet and heat vegetable oil over medium-high until shimmering. Pat steak dry, season with salt and pepper, and place in the skillet in a single layer.
  9. Cook steak without moving for about 2 minutes to form a crust, then flip and cook for another 2 to 3 minutes to desired doneness.
  10. Lower heat, add butter, and spoon melted butter over the steak for 30 seconds.
  11. Serve steak bites over the creamy mushroom orzo and garnish with fresh parsley.

Notes

Ensure to dry the steak well before seasoning for a better sear.
Use freshly grated parmesan for the best flavor and creaminess.
Optional red pepper flakes can enhance the flavor, adjust according to your spice preference.
