These Spring Brunch Puff Pastry Egg Tarts offer a delightful combination of flaky pastry, rich filling, and crispy bacon. They’re simple to make and perfect for brunch gatherings!

- 4 slices of original bacon, cut into 1 inch pieces
- 13 ounce puff pastry dough, thawed completely
- 4 eggs
- 1 tablespoon water
- 1/3 cup whole milk
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 1 teaspoon dijon mustard
- 1 cup cheddar cheese, grated from the block
- 1/4 cup green onion for serving, sliced thinly on a bias
Instructions
- Preheat the oven to 375 degrees F. Cook bacon in a skillet over medium low heat until crispy. Transfer to a paper towel lined plate to remove grease and set aside.
- Make an egg wash by whisking together one egg and water in a bowl.
- Prepare a cookie sheet with parchment paper. Slice the thawed puff pastry into 8 equal rectangular pieces and place them on the sheet. Create a border by running a paring knife around the inside of each pastry and prick the centers with a fork. Brush the tops with egg wash and bake for 10 minutes.
- While the puff pastry is baking, whisk together the remaining 3 eggs, milk, dijon mustard, salt, and pepper in a measuring glass for easy pouring.
- Once the puff pastry is out of the oven, press the centers down with the back of a fork. Pour in the egg mixture, being careful not to overfill, and sprinkle half of the cheddar cheese on top.
- Return the tarts to the oven and bake for another 10 minutes.
- Afterward, sprinkle the baked tarts with bacon pieces and the remaining cheese, then bake for an additional 5 minutes.
- Top with sliced green onions before serving. Serve with dijonnaise sauce if desired.
Notes
Feel free to substitute the bacon with another protein or omit it for a vegetarian version.
These tarts can be prepared ahead of time and reheated before serving for an easy brunch option.
Adding vegetables like spinach or bell peppers can enhance the flavor and nutrition.
