- 1½ pounds chicken breasts
- 1/4 cup avocado oil
- 3 tablespoons lime juice
- 1 tablespoon garlic, minced
- 2 tablespoons light brown sugar
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/4 teaspoon cayenne powder
- 1 each chili in adobo sauce, seeds removed and minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 whole lime
Instructions
- Trim any excess fat or tendons from the chicken breasts.
- Place the chicken in a freezer bag or between two sheets of plastic wrap and pound the thickest parts gently with a meat tenderizer or similar item.
- In a small bowl, mix together the avocado oil, lime juice, garlic, brown sugar, chili powder, cumin, cayenne, and minced chili in adobo sauce.
- Pour the marinade over the chicken, ensuring all sides are coated evenly.
- Refrigerate the chicken to marinate for at least 2 hours, but ideally up to 24 hours.
Notes
For extra tenderness, marinate the chicken overnight.
