Ingredients

Scale
  • 1 tablespoon salted butter
  • 4 large eggs
  • 2 tablespoons milk or cream
  • Salt & pepper to taste
  • 2 ounces smoked salmon
  • chopped chives for garnish

Instructions

  • Melt the butter in a nonstick pan over medium heat.
  • In a bowl, whisk together the eggs and milk (or cream), seasoning with a little salt and pepper.
  • Add the egg mixture to the pan with melted butter and gently scramble the eggs, stirring occasionally until soft curds begin to form.
  • Incorporate the smoked salmon into the eggs, continuing to scramble until the eggs are just set but still moist.
  • Garnish with chopped chives and either serve directly from the pan or transfer to serving plates.

Notes

Use fresh chives for a burst of flavor.
For a richer taste, you can substitute the milk with cream.
Adjust the seasoning based on the saltiness of the smoked salmon.
