- 3/4 cup old-fashioned rolled oats
Instructions
- Preheat the oven to 350 degrees Fahrenheit and spray a pie pan with non-stick spray.
- Pit, peel, and slice enough peaches to equal 5 cups, then transfer them to a medium-sized bowl.
- Add sugar, cornstarch, vanilla, and lemon juice to the peaches and mix well.
- Pour the peach mixture into the prepared pie pan.
- In a food processor, pulse together flour, brown sugar, and cinnamon until combined.
- Add the cold, cubed butter and pulse until the mixture resembles crumbs.
- Gently incorporate the old-fashioned rolled oats into the crumb mixture.
- Sprinkle the oat topping over the peach mixture in the pan.
