  • 5 cups peaches, sliced
  • 1/2 cup sugar
  • 2 tbsp cornstarch
  • 1/2 tsp vanilla
  • 1 tbsp lemon juice
  • 1/2 cup flour
  • 1/2 cup brown sugar
  • 1 tsp cinnamon
  • 1/2 cup butter, cold & cubed
  • 3/4 cup old-fashioned rolled oats

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit and spray a pie pan with non-stick spray.
  2. Pit, peel, and slice enough peaches to equal 5 cups, then transfer them to a medium-sized bowl.
  3. Add sugar, cornstarch, vanilla, and lemon juice to the peaches and mix well.
  4. Pour the peach mixture into the prepared pie pan.
  5. In a food processor, pulse together flour, brown sugar, and cinnamon until combined.
  6. Add the cold, cubed butter and pulse until the mixture resembles crumbs.
  7. Gently incorporate the old-fashioned rolled oats into the crumb mixture.
  8. Sprinkle the oat topping over the peach mixture in the pan.
  9. Bake for 30-35 minutes, or until the topping is golden brown.

Notes

Allow the crisp to cool for a few minutes before serving.
