- 1 pound kielbasa or smoked sausage, sliced into 1-inch coins
- 1 pound red potatoes, cut into 1-inch chunks
- 1 red bell pepper, sliced into strips
- 1/2 head small green cabbage, chopped into bite-size pieces
- 2–3 tablespoons olive oil
- salt and pepper to taste
- 1/2 teaspoon garlic powder or granulated garlic
- 1/2 teaspoon Italian seasonings
Instructions
- Preheat your oven to 425°F.
- Line a large rimmed baking sheet with heavy-duty foil and arrange the sausage coins, potatoes, bell peppers, and cabbage on the sheet.
- Drizzle olive oil over the ingredients and season with salt, pepper, garlic powder, and Italian seasonings. Gently toss to combine.
- Spread the mixture evenly over the baking sheet and bake for 25-30 minutes, or until potatoes are fork-tender and everything is golden brown. Serve immediately.
