Description

Sausage Stuffed Zucchini Boats are packed with flavor and easy to make. With savory sausage, marinara sauce, and gooey mozzarella, this dish is perfect for a quick, satisfying dinner that the whole family will enjoy.


Ingredients

  • 3 medium zucchini
  • 1 lb ground italian sausage
  • ½ onion chopped
  • 2 garlic cloves minced
  • 2 cups marinara sauce
  • 1 cup shredded mozzarella cheese
  • Salt and pepper as needed

Instructions

  1. Preheat your oven to 375°F and line a large baking pan with foil or parchment paper.
  2. Slice the zucchini in half lengthwise and scoop out the insides, setting the flesh aside.
  3. In a large skillet over medium-high heat, cook the sausage for about 3-4 minutes until browned.
  4. Add the chopped onion, minced garlic, and chopped zucchini to the skillet, cooking until the sausage is fully cooked and the veggies are softened, about another 3-4 minutes.
  5. Stir in the marinara sauce until well combined.
  6. Arrange the zucchini boats on the prepared pan, sprinkle with salt and pepper, and fill each boat with the sausage mixture. Top with mozzarella cheese.
  7. Bake for 15-20 minutes until the cheese is melted and bubbly. Test the zucchini for tenderness. Adjust the cooking time if using larger zucchinis.
  8. Serve hot and enjoy! Store any leftovers in the fridge.

Notes

Feel free to use spicy sausage for an extra kick.
Zucchini boats can be prepared ahead of time and stored in the fridge before baking.
For a healthier option, try using ground turkey sausage.
