Description

Ingredients

  • 3 small flour tortillas
  • 2 tbsp coconut oil, melted
  • 1 tbsp honey
  • 1 tsp ground cinnamon
  • 1 cup whipping cream
  • 1/2 tsp natural sweetener like Truvia
  • 1 tsp vanilla
  • 1 cup fresh berries like blueberries, raspberries, and strawberries
  • optional: cocoa powder

Instructions

  1. Preheat the oven to 375 degrees Fahrenheit.
  2. Cut the tortillas into quarters using a pizza slicer.
  3. In a small bowl, combine coconut oil and honey until well mixed.
  4. Brush both sides of each tortilla triangle with the coconut oil mixture, then sprinkle with cinnamon.
  5. Press three tortilla triangles into a muffin pan to form a cup shape.
  6. Bake in the oven for 15 minutes, then remove from the pan and let cool.
  7. In another mixing bowl, add whipping cream, sweetener, and vanilla. Beat until small peaks start to form.
  8. Fill each tortilla cup with whipped cream using a spoon or piping bag.
  9. Top the whipped cream with a variety of fresh berries.
  10. Optionally, sprinkle cocoa powder on top.
