These Red White and Blue Cheesecake Bars are a festive treat with a delicious Oreo crust, creamy filling, and stunning colors. Perfect for any celebration!

- 30 Oreo cookies
- 4 Tablespoons unsalted butter, melted
- 3 – 8 ounce packages cream cheese, softened
- 1 1/2 cups granulated sugar
- 1/4 cup sour cream
- 2 teaspoons vanilla extract
- 1/4 cup all purpose flour
- 3 large eggs
- red & blue gel food colors
Instructions
- Preheat the oven to 325 degrees. Line a 9×13 pan with foil.
- Place the cookies (cream included) in a food processor and pulse until they become crumbs.
- Stir in the melted butter until the mixture is combined. Press it evenly into the bottom of the prepared pan and bake for 10 minutes. Remove and let cool.
- Place a large baking sheet on the bottom oven rack and fill it halfway with water. Preheat the oven again.
- In a bowl, beat the cream cheese and sugar until creamy, then add the sour cream, vanilla, and flour, beating until smooth.
- Add the eggs and mix gently until just combined.
- Divide the batter evenly into 3 bowls and tint two of them red and blue using food coloring.
- Alternate spooning the colored mixtures over the crust, and swirl them gently with a butter knife without over-mixing.
- Position the pan on the oven rack above the water-filled pan and bake for 45-50 minutes. Remove from the oven and cool on a wire rack.
- Allow the cheesecake to cool at room temperature for 1 hour, then refrigerate for 4-6 hours before serving.
- Cut into squares and serve with whipped cream and sprinkles, if desired.
Notes
Make sure to let the cheesecake cool completely before refrigerating for the best texture.
Feel free to adjust the amount of food coloring to achieve your desired vibrancy.
