Description

These Raspberry Oat Bars offer an irresistible blend of sweet and tart flavors, combining oats and fresh raspberries. Quick to prepare, they’re a delightful treat for any time of day, be it a healthy snack or a comforting dessert.


Ingredients

  • 2 cups (250 grams) flour
  • 2 cups (180 grams) rolled oats
  • 1/2 cup (100 grams) granulated sugar
  • 1/2 cup (100 grams) light brown sugar
  • 1 teaspoon cinnamon
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup (225 grams) unsalted butter, room temp
  • 1 teaspoon vanilla extract
  • 2 1/2 cups (355 grams) fresh or frozen raspberries
  • 7 tablespoons (125 grams) raspberry jam, seedless recommended
  • 1/2 teaspoon vanilla extract
  • pinch of salt

Instructions

  • Preheat the oven to 350°F (175°C) and line an 8×8 pan with parchment paper.
  • In a large mixing bowl, combine flour, oats, sugars, cinnamon, baking soda, and salt until well mixed.
  • Cut the butter into cubes and add to the dry mixture. Using fingers, mix until it resembles a dough.
  • Once clumps form, add vanilla extract and combine into a dough. It may look like too much for the pan, but it's correct.
  • Scoop about 2/3 of the dough into the prepared pan, pressing it firmly to form the crust.
  • In a small bowl, combine filling ingredients to keep the raspberries from thawing until ready.
  • Spread raspberry filling over the crust, maintaining a small border around the edges.
  • Sprinkle the remaining crumble mixture over the top, lightly pressing it into the jam without flattening.
  • Bake for 30-40 minutes until the top is golden brown and the jam bubbles around the edges. Let cool for about 2 hours before chilling and cutting.

Notes

Use gluten-free oats for a gluten-free version.
Allow bars to cool completely before serving for better slicing.
Store in an airtight container in the fridge for up to 5 days.
