- 1/2 cup (60g) all-purpose flour
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground ginger
- 1/8 teaspoon sea salt
- 4 tablespoons (57g) cold butter, cut into slices
- 2 cups (142g) raspberries
- 2 cups (240g) all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon sea salt
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 4 tablespoons (57g) butter, softened
- 1 large egg, at room temperature
- 2 teaspoons vanilla extract
- 1 teaspoon orange zest
- 1/2 cup (113g) whole milk, room temperature
Instructions
- Preheat the oven to 375ºF. Line a 9-inch cake pan with parchment paper and set aside.
- Prepare the streusel topping by mixing granulated sugar, brown sugar, flour, cinnamon, ginger, and salt in a small bowl. Stir to combine and then mix in the butter until crumbly. Set aside.
- In a medium bowl, mix the flour, baking powder, and salt together with a wire whisk.
- In a separate bowl, cream the softened butter and sugar using an electric mixer. Add the egg, beating well after each addition. Scrape down the bowl as needed.
- Stir in vanilla extract and orange zest.
- Gradually add half of the milk, mixing gently, followed by half of the flour mixture, and repeat with remaining milk and flour, stirring just until combined.
- Pour half of the batter into the prepared pan, followed by half of the raspberries. Top with remaining batter and raspberries.
- Sprinkle the streusel topping evenly over the batter.
- Bake for 35-45 minutes, or until a toothpick comes out clean when tested in the center.
- Once baked, transfer to a wire rack and allow to cool for 10 minutes before cutting into squares for serving.
Notes
Feel free to substitute other berries if raspberries are not available.
For a touch of sweetness, serve with whipped cream or vanilla ice cream.
