Description

These Rainbow Grilled Gnocchi Skewers are bursting with flavor! Featuring tender gnocchi, vibrant veggies, and a zesty herb dressing, they’re an easy and delightful meal for any occasion.


Ingredients

  • 12 oz. potato gnocchi
  • 1 large bell pepper, chopped into chunks
  • 1 pint cherry tomatoes
  • ½ red onion, chopped into chunks
  • ½ cup olive oil, separated
  • ¼ cup fresh lemon juice, separated
  • 1 teaspoon sea salt, divided
  • ½ teaspoon ground black pepper, divided
  • ¼ cup chopped fresh basil
  • ¼ cup chopped fresh mint
  • ¼ cup fresh chopped cilantro
  • 4 oz. goat cheese crumbles

Instructions

  1. Preheat the grill to 400℉ and spray the grates with cooking spray.
  2. Bring a large pot of salted water to a boil. Cook the gnocchi for 1 minute before draining and rinsing with cold water. Set aside.
  3. In a 9×13 baking dish, combine ¼ cup of olive oil, 2 tablespoons of lemon juice, ½ teaspoon of sea salt, and ⅛ teaspoon of black pepper. Whisk to combine.
  4. Build the skewers by alternating gnocchi, peppers, onions, and cherry tomatoes until all ingredients are used.
  5. Roll each skewer in the olive oil and lemon juice mixture, reserving some for dressing later.
  6. Grill the skewers for 20 minutes, rotating every 5 minutes. Remove and set aside on a serving plate.
  7. Prepare the dressing by mixing remaining olive oil, lemon juice, salt, pepper, and herbs in the baking dish with leftover lemon juice and olive oil. Whisk to combine.
  8. Pour the dressing over the grilled skewers and garnish with goat cheese crumbles.

Notes

For added flavor, marinate the gnocchi and veggies in the olive oil and lemon juice mix for an hour before grilling.
Feel free to swap vegetables based on your preferences or seasonal availability.
Serve with a side salad for a complete meal.
