- 3 large eggs, separated
- 2½ cups all-purpose flour

- 1/2 teaspoon ground nutmeg

- 1 cup pumpkin puree
- 2 3/4 cups milk

Instructions
- Preheat a waffle iron and spray it with nonstick cooking spray.
- Separate the eggs, placing the whites in a large mixing bowl and setting the yolks aside. Beat the egg whites until stiff peaks form, then set aside.
- In another large bowl, combine flour, sugar, baking powder, baking soda, salt, cinnamon, ginger, nutmeg, and cloves. Mix well. Make a well in the center and add the reserved egg yolks, pumpkin puree, milk, vanilla extract, and vegetable oil. Whisk until almost smooth, leaving some lumps.
- Gently fold the beaten egg whites into the batter until no streaks remain, being careful not to overmix.
- Pour batter into the preheated waffle iron according to the manufacturer's instructions, and cook until golden brown on both sides.
- Serve warm with butter, maple syrup, and any favorite toppings.
Notes
For a sweeter waffle, consider adding more sugar to taste.
