Description

These Pumpkin Truffles boast an irresistible flavor with creamy pumpkin and white chocolate. Perfect for festive occasions or as a delightful treat, they are easy to prepare and sure to impress.

Ingredients

Scale
  • 4 ounces cream cheese, softened
  • 2 tablespoons powdered sugar
  • 1/3 cup pumpkin puree
  • 1 ¾ cups finely ground graham cracker crumbs
  • 1 teaspoon pumpkin pie spice
  • ½ teaspoon cinnamon
  • 12 ounces white chocolate chips
  • optional: extra graham cracker crumbs or english toffee bits

Instructions

  1. In a mixing bowl, combine softened cream cheese and powdered sugar, mixing until creamy and smooth.
  2. Add pumpkin puree and cinnamon, then mix on medium speed until well combined and smooth.
  3. Incorporate graham cracker crumbs, pumpkin pie spice, and cinnamon, mixing until fully integrated and thick, about 1-2 minutes.
  4. Transfer dough to a small bowl, cover, and refrigerate for about 2 hours, or longer if necessary.
  5. Prepare a baking sheet with parchment paper for the truffles.
  6. Scoop a tablespoon of dough and roll into a ball about 1 inch in diameter, placing on the baking sheet, spacing them 2 inches apart. You should get around 20 truffles.
  7. Chill for 20-25 minutes before proceeding to dip them in chocolate.
  8. In a microwave-safe bowl, add white chocolate chips and microwave at 100% power in 10-15 second intervals, stirring until fully melted and smooth, being careful not to overheat.
  9. Remove chilled truffles and dip each one into the melted chocolate using a fork, ensuring they are fully coated.
  10. Scrape the excess chocolate off the bottom of the truffle against the bowl's edge before placing it back on the parchment.
  11. Continue this process for the remaining truffles, re-dipping as needed once they have set enough to handle.
  12. Sprinkle tops with E nglish toffee bits or graham cracker crumbs immediately after dipping before the chocolate hardens.
  13. Return truffles to the refrigerator until the chocolate sets completely before serving.

Notes

For best results, chill the truffles well before dipping to maintain their shape.
You can adjust the sweetness by varying the amount of powdered sugar used.
These truffles can be stored in the refrigerator for up to a week.
