Description

These Plum Bars deliver an irresistible flavor with a crumbly crust and sweet plum filling. They’re easy to prepare and perfect for sharing or enjoying at home.


Ingredients

  • 1 ¾ cup all purpose flour
  • ⅔ cup sugar
  • ½ tsp baking powder
  • ¼ tsp salt
  • ½ cup butter, cold
  • 1 egg, whisked
  • 2 tbsp milk
  • 4 plums, diced small
  • ¼ cup sugar
  • 2 tbsp all purpose flour
  • ½ tsp vanilla extract

Instructions

  1. Preheat the oven to 400° F and prepare an 8×8 baking dish by lining it with parchment paper.
  2. In a large bowl, combine the all-purpose flour, sugar, baking powder, and salt. Grate the cold butter into the mixture using a cheese grater.
  3. Mix with your hands until the butter looks like small pebbles. Add the whisked egg and milk; stir to combine everything well.
  4. In a separate medium bowl, mix the diced plums with the sugar, flour, and vanilla extract until well coated.
  5. Press⅔ of the crust mixture into the bottom of the lined baking pan.
  6. Spread the plum mixture evenly over the crust in the pan. Sprinkle the remaining crust mixture on top of the plums.
  7. Bake for 30-32 minutes or until the edges turn golden brown. Allow the bars to cool at room temperature before slicing and serving.

Notes

Ensure the butter is very cold for a flaky crust.
Chilling the bars before slicing can help achieve clean cuts.
Feel free to substitute the plums with peaches or cherries for a different flavor.
