Description

This Pistachio Pesto is a vibrant blend of fresh basil, crunchy pistachios, and savory parmesan, making it an ideal addition to pasta or sandwiches. Simple to prepare and bursting with flavor, it’s perfect for a quick meal or as a vibrant dip!


Ingredients

  • 2 cups basil, packed
  • 2 garlic cloves
  • ½ cup pistachios
  • ⅓ cup parmesan cheese, freshly grated
  • ½ tsp salt
  • ¼ tsp pepper
  • ¼ tsp red pepper flakes
  • ½ cup olive oil

Instructions

  1. Place all ingredients except olive oil into a food processor and pulse to mix.
  2. While the food processor is running, slowly add the olive oil through the top.
  3. Blend until everything is well combined.
  4. Transfer pesto to a bowl or glass jar and serve.
  5. For storage, keep in a sealed jar in the fridge for up to 3 days, or freeze for up to 5 months.
