- 3 mint leaves
- 1 teaspoon brown sugar
- ice
- 2 ounces rum
- 2 ounces pineapple juice
- 1 ounce coconut milk
- ¾ ounce lime juice
- club soda
Instructions
- In a cocktail shaker, add the mint leaves and brown sugar and press with a muddler to release the mint oils.
- Fill the shaker halfway with ice and then pour in the rum, pineapple juice, coconut milk, and lime juice.
- Cover the shaker and shake vigorously until chilled and ingredients are fully mixed, about 10 seconds.
- Strain the mixture into a highball glass over fresh ice, then top with club soda.
- Garnish as desired, serve immediately, and enjoy responsibly!
Notes
For extra flavor, use fresh pineapple juice instead of bottled.
Feel free to adjust the sweetness by adding more or less brown sugar based on your taste.
