- 1 pound thick-cut bacon, (diced)
- 1 large yellow onion, (finely diced (about 1 ½ cups))
- 3 cups (495 g) fresh pineapple, (finely diced (about ½ of a medium pineapple))
- 2 teaspoons garlic, (minced)
- ½ cup (100 g) light brown sugar, (packed)
- ¼ cup (60 g) apple cider vinegar
- ¼ cup (79 g) maple syrup
- 1 teaspoon chili powder
- ¼ teaspoon kosher salt
- ¼ teaspoon red pepper flakes, (optional)
Instructions
- In a medium skillet over medium heat, cook the diced bacon until crispy, stirring occasionally. Line a plate with paper towels while the bacon cooks.
- Transfer the cooked bacon to the lined plate using a slotted spoon, leaving about ¼ cup of bacon grease in the skillet; discard the rest.
- Reduce heat to medium-low. Add the diced onion to the skillet and cook, stirring often until softened and caramelized.
- Add the finely diced pineapple to the skillet. Cook, stirring frequently until the pineapple releases its juices and softens, about 10 minutes.
- Stir in the garlic and cook for about 30 seconds.
- Add the light brown sugar, apple cider vinegar, maple syrup, chili powder, kosher salt, and red pepper flakes (if using). Stir to combine.
- Return the cooked bacon to the skillet and mix everything together.
- Allow the mixture to simmer over low heat for 20 to 30 minutes, stirring occasionally, until thickened to a jam-like consistency. Continue cooking if it's too loose until most of the liquid evaporates. The jam should be thick and glossy.
- Let cool slightly before serving. Serve warm or refrigerate and gently reheat before using.

This jam can be stored in the refrigerator for up to a week.
