Ingredients

Scale
  • 2 cups extra sharp cheddar cheese
  • 8 ounces cream cheese (room temperature)
  • 1/2 cup light mayonnaise
  • 4 ounces diced pimento (drained)
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon kosher salt (or dash table salt)
  • dash black pepper

Instructions

  1. In a large bowl, combine all of the ingredients.
  2. Using a hand mixer, blend the ingredients until smooth.
  3. Taste the mixture and adjust seasoning with more cayenne, salt, or black pepper if needed.
  4. Serve the pimento cheese with crackers and fresh vegetables.

Notes

For extra flavor, let the pimento cheese sit for a couple of hours before serving.
