This Pimento Cheese Pasta Salad features a delightful blend of flavors, combining creamy cheese, crispy bacon, and fresh ingredients. Perfect for quick dinners or gatherings, it’s easy to prepare and absolutely delicious!

- 12 oz. uncooked short pasta
- 2/3 cup mayonnaise
- 1 Tablespoon Dijon mustard
- 2 teaspoons Worcestershire sauce
- 1/2 teaspoon garlic powder
- 1/2 teaspoon smoked paprika
- 2 cups shredded cheddar cheese
- 1/2 cup diced red onion
- 1 (4-oz.) jar diced pimento peppers, drained
- 8 slices bacon, cooked, crumbled and divided
- 1 Tablespoon chopped fresh chives
Instructions
- Boil a large pot of salted water and cook the pasta until al dente. Drain and rinse with cold water, then drain thoroughly again.
- In a large bowl, whisk together the mayonnaise, Dijon mustard, Worcestershire sauce, garlic powder, smoked paprika, kosher salt, and black pepper.
- Add in the cheddar cheese, red onions, and pimento peppers to the mixture, then fold in the pasta and half of the crumbled bacon.
- Garnish the pasta salad with the remaining bacon and sprinkle with chopped chives before serving.
Notes
For extra flavor, let the salad chill for at least an hour before serving.
Feel free to adjust the amount of bacon based on preference.
This salad can be made a day ahead for convenience.
