- ½ cup sugar
- 1 lemon, juiced
- ½ lemon, zest
Instructions
- Combine peaches, sugar, lemon juice, and lemon zest in a large saucepan.
- Heat the mixture until it reaches a rapid boil and continue boiling for 20 minutes, stirring occasionally. Use a wooden spoon to help break down the peaches until the mixture thickens. It's ready when the peaches cling to the back of a spoon.
- Pour the preserves into a large glass jar or several smaller jars with lids and cool. Store in the refrigerator for up to 2 months.
