- 4 large egg yolks
- 1 1/4 cups granulated sugar
- 2 cups heavy whipping cream
- 2 cups half and half
- 2 tablespoons pure vanilla extract
- 1 tablespoon bourbon optional
Instructions
- Combine diced peaches, 3 tablespoons of sugar, lemon juice, and a pinch of salt in a bowl; let it sit for 20-30 minutes until juicy.
- Transfer half of the peaches and juices to a saucepan and simmer over medium heat for 5-7 minutes until softened. Allow to cool, then pulse in a blender for a partially smooth mixture.
