Description

Peach Crumble Bars (Gluten-Free) are a delicious dessert made with ripe peaches and almond flour, offering a mouthwatering flavor and simple preparation. Perfect for a sweet treat!


Ingredients

  • 3 cups ripe peaches diced small (about 5 medium)
  • 2 tablespoons maple sugar
  • 1 tablespoon tapioca flour
  • 1 teaspoon fresh lemon juice
  • 1/2 teaspoon vanilla extract
  • pinch sea salt
  • 2 1/2 cups blanched almond flour
  • 1/3 cup tapioca flour
  • 1/2 cup maple sugar
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon sea salt
  • 1/2 cup refined coconut oil melted and cooled slightly
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract optional

Instructions

  1. Preheat your oven to 350°F and line an 8×8 inch baking pan with parchment paper.
  2. In a medium skillet, combine the peaches, maple sugar, tapioca flour, lemon juice, vanilla, and salt. Cook over medium heat for 4-5 minutes, stirring occasionally, until the peaches soften and become glossy.
  3. Remove from heat and let the filling cool while preparing the crust and crumble.
  4. In a large bowl, whisk together almond flour, tapioca flour, maple sugar, baking soda, and salt.
  5. Add melted coconut oil, egg, vanilla, and almond extract if using. Stir until a crumbly dough forms.
  6. Firmly press about 2/3 of the dough into the prepared baking pan to create the crust.
  7. Bake the crust for 10-12 minutes, until lightly golden around the edges.
  8. Let the crust cool for 5 minutes after removing it from the oven.
  9. Spread the peach filling evenly over the crust.
  10. Crumble the remaining dough over the peaches in various sizes.
  11. Bake for 30-35 minutes until the topping turns golden brown and the peach filling bubbles around the edges.
  12. Allow to cool completely at room temperature, then refrigerate for 1-2 hours before slicing.

Notes

For a different flavor, try adding fresh berries to the peach filling.
Make sure to cool the bars completely for cleaner slices.
Store leftovers in an airtight container in the refrigerator.
