- 3 pounds ripe peaches peeled, pitted and cut into 8 pieces
- 2/3 cup white granulated sugar
- 2 tablespoons corn starch
- 1 teaspoon vanilla
- ½ teaspoon cinnamon
- ¼ teaspoon salt
- ¾ cup dark brown sugar packed
- ¾ cup white all-purpose flour
- 2/3 cup old fashioned rolled oats
- ½ teaspoon cinnamon
- ¼ teaspoon nutmeg
- ½ stick salted butter cut into very small pieces
Instructions
- Preheat the oven to 350 degrees Fahrenheit.
- Grease a 9-inch baking dish with non-stick spray and set aside.
- Place the sliced peaches in a large bowl and mix with the sugar to coat evenly, then set aside.
- In another bowl, combine the brown sugar, flour, rolled oats, cinnamon, and nutmeg.
- Cut the diced butter into the flour mixture using a pastry blender or fork until coarse crumbs form.
- Add vanilla, cornstarch, cinnamon, and salt to the bowl of peaches and toss to coat the slices evenly.
- Spread the peach mixture evenly in the bottom of the prepared baking dish.
- Top the peaches with the crumb mixture and spread it evenly.
- Bake for 45-50 minutes until the topping is golden brown and juices are bubbling.
- Remove from the oven and let it rest for 15 minutes before serving.
- Optional: Serve warm with vanilla ice cream and a sprig of mint.
Notes
Allow the crisp to cool slightly before serving for better texture.
For added flavor, you can mix in other fruits like strawberries or blueberries with the peaches.
