- 1/2 cup unsalted butter, melted
- 16 oz cream cheese, room temperature
- 2 cups unsalted butter, slightly cold
- 5 cups powdered sugar, sifted
- 1 tsp pure vanilla extract
Instructions
- Preheat the oven to 350°F and prepare three 8-inch cake pans with baking spray and parchment.
- Chop the peaches and blend them in a food processor to small pieces; sprinkle with sugar and let sit for 5 minutes, then blend freeze-dried peaches into a fine crumb.
- In a bowl, sift together all-purpose flour, cake flour, baking powder, baking soda, and salt, then set aside.
- Beat the room temperature butter, oil, and sugar with a mixer on high for 2 minutes until fluffy and light, then add vanilla, eggs, freeze-dried peaches, and pureed peaches, mixing until combined.
- Mix in the dry ingredients and buttermilk on low speed until just combined, then stir to finish mixing.
- Evenly distribute the batter into the prepared pans, then bake for 25-30 minutes or until a toothpick comes out clean.
- Allow cakes to cool in pans for 10 minutes before transferring to a cooling rack until completely cool.
