Description
This Pasta Salad combines short pasta, mini mozzarella, and salami for a burst of flavor. Quick to prepare, it’s ideal for gatherings or a quick meal at home.
Ingredients

- 1 pound short pasta shapes such as rotini or bow ties
- 8 ounces mini mozzarella balls halved
- 1 pound salami chopped
- 1 (6-oz) jar marinated artichoke hearts drained and sliced
- 3 cups cherry tomatoes halved (about 1 ½ pints)
- ½ cup black olives sliced
- ¼ cup chopped sun-dried tomatoes
- 2 tablespoons sliced fresh basil
- 2 tablespoons chopped fresh parsley
- 2 cups italian dressing homemade or store-bought
Instructions
- Cook the pasta as per the instructions on the package. Drain and rinse under cold water until cold, then drain well again.
- In a large bowl, combine all salad ingredients. Drizzle with dressing and mix well to ensure thorough coating.
- Cover and refrigerate for at least 1 hour before serving.
Notes
Feel free to add more veggies like bell peppers or cucumbers for extra crunch.
This salad can be made a day in advance for added flavor.
Serve chilled for best taste.
