Description

This Pasta Salad combines short pasta, mini mozzarella, and salami for a burst of flavor. Quick to prepare, it’s ideal for gatherings or a quick meal at home.


Ingredients

Scale
  • 1 pound short pasta shapes such as rotini or bow ties
  • 8 ounces mini mozzarella balls halved
  • 1 pound salami chopped
  • 1 (6-oz) jar marinated artichoke hearts drained and sliced
  • 3 cups cherry tomatoes halved (about 1 ½ pints)
  • ½ cup black olives sliced
  • ¼ cup chopped sun-dried tomatoes
  • 2 tablespoons sliced fresh basil
  • 2 tablespoons chopped fresh parsley
  • 2 cups italian dressing homemade or store-bought

Instructions

  1. Cook the pasta as per the instructions on the package. Drain and rinse under cold water until cold, then drain well again.
  2. In a large bowl, combine all salad ingredients. Drizzle with dressing and mix well to ensure thorough coating.
  3. Cover and refrigerate for at least 1 hour before serving.

Notes

Feel free to add more veggies like bell peppers or cucumbers for extra crunch.
This salad can be made a day in advance for added flavor.
Serve chilled for best taste.
