  • 1 pint juicy cherry tomatoes, sliced in half
  • 1/4 cup (57ml) dry white wine
  • 1/2 cup fresh basil, finely chopped
  • 2 tablespoons (28ml) fresh lemon juice
  • 1/2 teaspoon fresh lemon zest

  • 1 and 1/2 pounds fresh cod, cut into 4 fillets

Instructions

  1. Warm olive oil in a large sauté pan over medium heat.
  2. Add crushed red pepper flakes and garlic; sauté for 1 minute until fragrant but not browned.
  3. Stir in cherry tomatoes and cook until soft and blistering, about 8 to 12 minutes, stirring occasionally.
  4. Pour in white wine, stir, and let it reach a gentle simmer.
  5. Add basil, lemon juice, lemon zest, salt, sugar, and pepper; cook for another 2 minutes and adjust the seasoning as needed.

Notes

For a thicker sauce, reduce the amount of wine used.
