- 1/3 cup coconut oil
- 1 1/4 cup dairy free chocolate chips
- 3 eggs
- 1 cup coconut sugar
- 1 cup almond flour, sifted
- 1/4 tsp salt
Instructions
- Preheat the oven to 350°F (175°C).
- Melt coconut oil and chocolate chips in a saucepan over low heat, stirring until smooth; then set aside.
- In a large bowl, whisk together eggs and coconut sugar for at least 45 seconds to create a crackly top.
- Gently fold in the sifted almond flour and salt by hand to avoid over-mixing.
- Pour in the melted chocolate mixture and stir by hand until just combined.
- Prepare an 8×8 baking dish by lining it with parchment paper or grease it with nonstick spray; pour the batter into the pan.
- Bake for 35-40 minutes or until a toothpick inserted comes out clean. Let cool before cutting.
