Description

  • 10 ounces tuna (2 cans) (drained)
  • 1 ½ cups cherry tomatoes (halved)
  • 1 English cucumber (diced)
  • 1 orange bell pepper (diced)
  • 1 shallot (thinly sliced)
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons chopped fresh dill
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons lemon juice
  • 2 teaspoons Dijon mustard
  • 2 cloves garlic (minced)
  • 1 teaspoon sea salt
  • ½ teaspoon ground black pepper

Instructions

  1. In a large mixing bowl, combine the beans, tuna, cherry tomatoes, cucumber, orange bell pepper, shallot, parsley, and dill.
  2. In a small bowl, whisk together the olive oil, lemon juice, minced garlic, sea salt, and ground black pepper.
