Description

This Matcha Swiss Roll Cake with Black Sesame Mousse is a delightful dessert that combines the earthy flavors of matcha with creamy black sesame, creating a unique treat that’s perfect for gatherings. With simple prep and rich flavors, it’s destined to impress your loved ones!


Ingredients

  • 120 g cake flour
  • 15 g matcha powder
  • 1 teaspoon baking powder
  • ¼ teaspoon kosher salt
  • 5 large eggs, separated
  • 150 g granulated sugar
  • 55 g milk, whole or 2% reduced fat
  • 1 tablespoon ice cold water
  • 1 teaspoon gelatin powder, or 1 silver gelatin sheet
  • 60 g sesame maple black sesame spread
  • 454 g heavy cream, (2 cups), very cold, divided
  • 30 g confectioners sugar, (powdered sugar)

Instructions

  1. Preheat the oven to 400°F and line a 15×10-inch jelly roll baking sheet with parchment paper or a silpat mat.
  2. In a small bowl, combine sifted cake flour, sifted matcha powder, baking powder, and salt. Set aside.
  3. In a large bowl, whisk together egg yolks, granulated sugar, and milk until the mixture becomes pale.
  4. In another clean bowl, whip the egg whites until they form medium-stiff peaks.
  5. Add the dry flour mixture to the yolk mixture and fold to combine. Then, gently fold in the whipped egg whites in three additions until fully incorporated.
  6. Pour the batter into the prepared baking sheet, spreading it evenly with an offset spatula. Bake for 8-10 minutes until the cake springs back when touched.
  7. Once baked, remove from the oven and run a mini offset spatula around the edges to loosen the cake.
  8. While still warm, invert the cake onto a clean kitchen towel, gently remove the parchment, and roll the cake into a log using the towel. Let it cool to room temperature on a wire rack.

Notes

Ensure the heavy cream is very cold for better whipping.
If using gelatin sheets, soak them in cold water for a few minutes before using them in the recipe.
The rolled cake can be filled with any preferred frosting or whipped cream.
