Description

Ingredients

  • 2¼ cups flour
  • 2 tablespoons cornstarch
  • 2 teaspoons baking powder
  • 1¾ sticks butter (14 tablespoons)
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • 4 large eggs
  • ⅓ cup heavy cream
  • 3 tablespoons unsweetened cocoa powder
  • 1 tablespoon granulated sugar
  • 2 tablespoons heavy cream
  • powdered sugar or chocolate ganache

Instructions

  1. Preheat the oven to 350°F and line a 9×5-inch loaf pan with parchment paper.
  2. In a small bowl, whisk together the flour, cornstarch, and baking powder; set aside.
  3. Cream the softened butter in a mixing bowl, then add granulated sugar, vanilla extract, and salt. Beat until pale and fluffy for 2-3 minutes.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Gradually incorporate the flour mixture and heavy cream into the batter until smooth, alternating between the two.
  6. Pour about ⅔ of the batter into the prepared pan. In a separate bowl, mix the remaining batter with cocoa powder, sugar, and heavy cream, then spread over the vanilla batter. Swirl the two batters together with a knife.
  7. Bake for 55-60 minutes, or until a toothpick inserted in the center comes out clean. Let the cake cool in the pan for 10 minutes before transferring to a wire rack.
  8. Allow the cake to cool completely before dusting with powdered sugar or topping with chocolate ganache.

Notes

Make sure the butter is softened to room temperature for easy mixing.
For a richer flavor, use high-quality cocoa powder.
Cool the cake completely before slicing to ensure clean cuts.
