Description

This Leprechaun Pistachio Fudge features a creamy blend of white chocolate, sweetened condensed milk, and irish cream, topped with crunchy pistachios. It’s a simple and quick no-bake dessert that satisfies your sweet cravings without the fuss! Ideal for gatherings or as a special treat any day.


Ingredients

  • 3 ½ cups white chocolate chips (2224 ounces)
  • 14 ounces sweetened condensed milk
  • ¼ cup irish cream
  • 1 cup shelled pistachios roughly chopped

Instructions

  • Line an 8-inch × 8-inch baking dish with parchment paper or tin foil, allowing it to hang over the sides for easy removal of the fudge later.
  • Pour condensed milk into a microwave-safe bowl and heat it for 1 minute.
  • In a large glass bowl, add white chocolate chips and pour the warmed condensed milk over them. Let it sit for 1 to 2 minutes, then stir until the chocolate has fully melted. If needed, microwave for an additional 15 seconds to aid melting and stir again.
  • Mix in the irish cream with the white chocolate mixture until fully combined. This may take a few minutes. Then, add 3/4 of the chopped pistachios and mix well.
  • Pour the fudge mixture into the prepared pan. Sprinkle the reserved pistachios on top and gently press them into the fudge.
  • Refrigerate the fudge for 3 to 4 hours until firm. Once set, remove it from the dish, peel off the liner, and cut into 25 even pieces. Store in an airtight container in the fridge.

Notes

Ensure the baking dish is lined properly for easier removal.
For best results, refrigerate the fudge for the entire time to achieve the perfect consistency.
