Description

These Lasagna Roll Ups are a delightful twist on classic lasagna. With their savory filling of ricotta, mozzarella, and seasoned beef, they’re perfect for a quick dinner or comforting meal. Easy to prepare and packed with flavor, this dish will surely satisfy your cravings for homemade goodness.


Ingredients

  • 9 lasagna noodles
  • 1 teaspoon kosher salt
  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cups marinara sauce
  • 1 teaspoon oregano
  • 1 teaspoon basil
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 teaspoon red pepper flakes
  • 1 cup ricotta cheese
  • 1 egg
  • 2 1/2 cups mozzarella cheese, divided
  • 1/4 cup Parmesan cheese
  • 2 tablespoons parsley

Instructions

  1. Preheat your oven to 375°F and prepare a 9×13 inch baking dish with cooking spray.
  2. Bring a large pot of water to a boil. Add kosher salt, then the lasagna noodles. Cook as per the package instructions, drain, and set aside.
  3. In a large skillet over medium heat, cook the ground beef, breaking it up as it cooks. Add the onion and garlic, and sauté until the onion is soft, about 3 minutes. Drain any excess grease.
  4. Stir in the marinara sauce, oregano, basil, salt, pepper, and red pepper flakes. Let the sauce simmer for 10 minutes.
  5. In a separate bowl, combine ricotta cheese, egg, 1 1/2 cups mozzarella cheese, Parmesan cheese, and parsley.
  6. Spread 1/2 cup of sauce on the bottom of the baking dish.
  7. On a baking sheet, lay out the cooked noodles. Spread 1/4 cup of the cheese mixture on each noodle, topping with about 1 tablespoon of meat sauce. Roll each noodle and place in the baking dish. This recipe yields around 16 roll ups. Pour the remaining sauce over the roll ups and top with the remaining mozzarella cheese.
  8. Cover the baking dish with foil and bake for 30-35 minutes. Remove the foil and broil for a few minutes to brown the cheese on top.

Notes

You can use any type of ground meat, such as turkey or chicken, as a healthier alternative.
Feel free to add vegetables like spinach or mushrooms to the cheese mixture for added nutrition.
Leftovers can be stored in the refrigerator for up to 3 days.
