Ingredients

  • 2 lbs boneless skinless chicken thighs
  • ¼ cup tequila blanco
  • ¼ cup lime juice
  • 2 tablespoons olive oil
  • 1 tablespoon dried cilantro (or fresh chopped)
  • 1 tablespoon packed dark brown sugar
  • 1 tablespoon garlic paste
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon tomato powder (or tomato paste)
  • ½ teaspoon chipotle powder
  • kosher salt & fresh ground black pepper, to taste
  • fresh sliced lime, chopped cilantro- for garnishes, optional

Instructions

  1. Place chicken thighs in a large resealable plastic bag or bowl.
  2. Add tequila, lime juice, olive oil, cilantro, brown sugar, garlic paste, cumin, paprika, tomato powder/paste, chipotle powder, and season with salt and pepper.
  3. Massage the mixture into the chicken until well coated, then seal the bag or cover the bowl and refrigerate for at least 2 hours or preferably overnight.
  4. Remove the marinated chicken from the fridge and let it sit at room temperature before grilling.
  5. Preheat the grill to medium-high heat (375-450°F) and grease the grates.
  6. Place the chicken thighs on the hot grates and grill for about 4-5 minutes per side until they reach an internal temperature of at least 165°F.
  7. Remove the chicken from the grill and place on a serving platter, tenting with foil. Let rest for at least 10 minutes.
  8. For stovetop grilling, preheat a grill pan over medium heat, brushing with oil, and grill chicken for 5-7 minutes per side until done.
  9. Garnish the platter with lime wedges and cilantro, if desired, and enjoy.

Notes

For best flavor, marinate the chicken overnight.
Allow chicken to reach room temperature before grilling for even cooking.
Use tongs to handle the chicken to avoid piercing and losing juices.
