Description

This Jalapeno Popper Cucumber Salad is bursting with flavor, featuring fresh cucumbers, spicy jalapeños, and a creamy dressing. It’s a refreshing and easy dish that makes a great side for any meal or a delightful healthy snack.


Ingredients

  • 2 large cucumbers, thinly sliced (about 4 cups)
  • 1 large jalapeño, seeded and finely diced
  • ¼ cup (40 g) red onion, finely diced
  • 3 tablespoons cream cheese, softened
  • 2 tablespoons sour cream
  • 1 tablespoon dry ranch seasoning
  • ¼ cup (28 g) sharp cheddar cheese, finely shredded
  • 2 slices bacon, cooked and crumbled

Instructions

  1. In a large bowl with a tight-fitting lid, combine the sliced cucumbers, diced jalapeño, and red onion. Set it aside.
  2. In a small bowl, mix together the softened cream cheese, sour cream, and dry ranch seasoning until the mixture is mostly smooth.
  3. Gently fold in the shredded cheddar cheese and crumbled bacon into the cream cheese mixture.
  4. Pour the cream cheese mixture over the vegetables in the large bowl.
  5. Secure the lid on the bowl and gently shake to coat the vegetables evenly, being careful not to crush the cucumbers. Alternatively, you can stir the mixture without the lid, scraping down the sides as needed.
  6. Serve immediately or refrigerate for at least 30 minutes before serving to enhance the flavor.

Notes

For extra crunch, consider adding some chopped bell peppers or celery.
Make it ahead of time for parties, the flavors meld beautifully after chilling!
